Grilled Chicken with Tomato, Lime and Cilantro Salsa
serves 4
Ingredients
- chicken breasts, skinless, pounded to 1/2 inch thickness
- 2 C tomatoes, seeded, diced
- 1/2 C cilantro, chopped
- 4 ea scallions, thin slice
- 2 T lime juice
- 3 T olive oil
- 1-2 t sugar
- 1 t lime zest
- 2 t chipotle in adobo sauce, minced
Instructions
- Combine the tomatoes, cilantro, scallions, lime juice, 1 T olive oil, sugar and lime zest in a bowl. Season to taste.
- Season the chicken breasts, then combine the chipotle with 2 T olive oil and coat the chicken with the mixture.
- Grill the chicken breasts until done.
- Plate the breasts, dress with the salsa and serve.
