Grilled Chicken with Tomato, Lime and Cilantro Salsa
serves 4

Ingredients

Instructions

  1. Combine the tomatoes, cilantro, scallions, lime juice, 1 T olive oil, sugar and lime zest in a bowl. Season to taste.
  2. Season the chicken breasts, then combine the chipotle with 2 T olive oil and coat the chicken with the mixture.
  3. Grill the chicken breasts until done.
  4. Plate the breasts, dress with the salsa and serve.
